Banana Pudding Bars
If you love the flavor of bananas, then you will love these Vanilla Banana Pudding bars.
This recipe combines the sweet taste of vanilla wafers to the rich taste of banana pudding to make these wonderfully delicious home baked bars.
Serve them up warm with a topping of homemade vanilla ice cream and you are sure to get rave reviews! Because they are nice and thick, they freeze well too, so quite often I will double the recipe so that I can tuck some away to thaw when needed.
Ingredients for Banana Pudding Bars
12 ounces Vanilla Wafers, crushed
1 ¾ cup Butter
2 ½ cups All Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
1 cup Sugar
1 package of Banana Cream Pudding Mix (3.4ounce)
2 Eggs
1 teaspoon Vanilla Extract
1 cup White Chocolate Chips
How to make Banana Bars with pudding
Reserve about a cup of crushed vanilla wafers and set aside for later.
Place the rest of the wafers plus ¾ cup of melted butter in a medium sized bowl and mix together. Pat the crumb mixture into the bottom of a 9×13 baking dish. Bake at 400 degrees for 5 minutes.
In a large bowl, blend together the flour, baking soda, salt, sugar, and pudding mix. Add in the eggs, the remaining butter, and the vanilla extract and mix until ingredients are fully blended.
Fold in the chocolate chips and the vanilla wafers that you set aside. Carefully place the mixture onto the pre-baked crust.
Bake the bars at 350 degrees for about 15 minutes or until a toothpick inserted into the center of the bars comes out clean.
