If you have been reading my blog for anytime at all, then one thing that you probably know about me is that while I like yummy food and recipes, I also love for them to be simple! Here is one of our favorite simple little recipes that we probably make at least once a week. I have a few items on my list for every time that we stop at the farmer’s market, and those items include: Avocados, red onions, lemons and cilantro. And all four of these items just happen to blend together to make what has to be the world’s easiest (and yummiest!) guacamole. My hubby and I have been making this for a quite a few years, and it seems like the more simple the recipe gets, the more we like it!
To make this quick homemade guacamole, you will need:
1 large Avocado (or more, depending on how much you want to make)
1 lemon (or lemon juice)
1 bushel of cilantro
1 red onion
I start by mashing up the avocado, and then adding the other items as needed. Typically, per avocado (and one large one makes just enough for my family for a nice dipping snack) I will use 1/4 cup chopped red onion (to taste), 1/4 cup chopped cilantro (not a packed 1/4, but loosely filled) , the juice of 1/3 the lemon (just squeeze it once or twice over the dip a couple times), and then grind sea salt over the dip to your taste preference. Easy. Peasy!! Grab a bag of tortilla chips … and enjoy!
I do recommend making it fresh, right before you are going to eat it, as I have yet to master the art of my avocados not turning brown.
