Guest Post: Trish from Mom on Timeout has another fun St. Patrick’s Day idea to share with us:
St. Patrick’s Day is tomorrow and what’s more fun that celebrating with rainbows! These cupcakes are a delicious and festive way to enjoy this special day!
Make up your cupcakes and spread a thin layer of frosting. I used a lemon cake mix and added in lime zest and fresh lime juice to give the cake some nice flavor. Strawberry, lime and funfetti cake mixes would also pair nicely with the skittles. I used rainbow cupcake liners to make these extra special!
Now is the fun part – decorating! I think it’s fun to have the kids help decorate and to see what they come up with. We made all kinds of rainbows and added frosting for clouds. So easy, so fun, and SO delicious!
