From My Oven

For the longest time, dinner time would stress me out. My kids wanted attention, and I needed to cook … so I started letting my kids “help” me in the kitchen. Little odd jobs (sometimes “pretend” jobs…just to keep them busy)  And I have to say, I have actually been enjoying it…… and we kept things REALLY simple. I shared this recipe this summer, but I am sharing it again because I think it is such a fun one to do together… it’s Homemade “Kid” Pizza.

For Starters … pizza sauce ….

…lots and lots of pizza sauce…then comes the cheese, ya gotta have cheese! (just ask little sissy …her pizza was all about the cheese) Next comes the ham. I have started doing something new the past few months because I have been finding hams marked down at our local Albertsons (due to close exp. dates) I paid only $7 and change for the last one! … so I bring them home, bake them, and then my hubby seals them into individual freezer packets so that we can take them out as we need them. This works great for breakfast because it is just the perfect size for Ham & Eggs for our family. (and it gives us a LOT of ham that lasts quite a while) And it is also perfect for when we make …. Pizza!

So…add the Ham and then next comes the pineapple…and we are ready for the oven…. 20 minutes later (we do a really thin crust, so it doesn’t take long) …. and we have finished pizzas ….

Yum!! …oh! And here is a little secret. Normally, I make my own dough (or use the bread maker to make it) …but for this project…I brought in a little helper, just to keep things simple … at 49cents a box… this stuff comes in really handy for fun projects like this!…and the end result…success!! (plus…they had made their own dinners!!) It was fun, relaxing…and yummy!!

To keep in line with my New Year resolution to Simplify… I am going to re-post this recipe that I have shared before. It is one of our favorites, Easy Homemade Chicken Noodle Soup.

Not much too it … but it is yummy, inexpensive and it goes a looooong way. Plus it will warm your belly and fill you up! Here’s what I use: A Rotisserie Chicken (peeled off the bones and torn into bits/pieces), about 2-3 cups of baby carrots (I leave them whole), 3 celery stalks (sliced), 2-3 Red Potatoes cubed, Egg Noodles (I use the kind that you find in the frozen pasta section …they are sometimes hard to find, and the brand that I like best is called Grandma’s), and 6-8 Chicken Bullion cubes, Pepper and Garlic Pepper (to taste). Here’s what I do:

I fill my 8 quart pot about 3/4 full of water and bring it to a boil. I add the Chicken Bullion cubes to the water as it is boiling, and then begin adding vegetables. I let those boil for about 10 minutes and then I add in the noodles per the directions on the bag (I use frozen noodles – and they usually require 10-15 min of boiling) when they are about 1/2 way done, then I add in the Chicken and finish out the noodles, adding a few dashes of pepper . This is such a simple soup…but it has so much flavor. When I serve it, I also grind McCormic Garlic Pepper (major key ingredient here!)  on the top (we can’t live without this stuff…so yummy!) I also serve this soup with homemade biscuits.

I can run in to a store about 1 hour before serving this meal and purchase all ingredients for around $12 (and half of the cost is the chicken itself) and that is a pretty economical meal considering that this soup makes a LOT and we will literally get 3 meals (dinners/lunches) out of it for our family of four.

I also want to add one thing about my recipes. I don’t want anyone to get the wrong idea and think that I consider myself some kind of kitchen expert. I would love to be, but I am quite the opposite actually…which is why I like to share my recipes with you because they are SIMPLE. You are probably (most likely…) a better cook than I am…but everyone can use some fun new recipes and yummy and simple are a good combination. My friend Tracie taught me this recipe, and it has been a favorite ever since!

One of my goals in the New Year is to SIMPLIFY (always!) … and the more and more I continue on my mission to simplify things, the more I am finding that schedules really do work. So… I am in the process of outlining my weekly activities so that I can fit everything in.  We love home baked bread, but sometimes I get too scattered to bake it and we find ourselves making a quick run to the store for bread. This is something that I want to change in 2011. I have officially declared Tuesdays as BREAD BAKING DAY…so I thought that I would share with you one of our favorite recipes, which also happens to be the easiest. In fact…we call it: Easy Bread. (and let me tell you … Easy Bread makes one mean grilled cheese sandwich!)

Here is what you will need to make Easy Bread:

3 Cups Warm Water (almost hot)

1 package Yeast (or 2 1/2  tsps)

1/2 tsp salt

1/3 cup sugar

5-6 cups flour (I have used many kinds of flour with this bread, so experiment and see what you like best)

First of all, combine your water, yeast, sugar and salt and let them sit for 5 minutes. Slowly start adding in your flour, and by the 4th or 5th cup of flour, I am usually using my hands. Add in flour as you need it (I usually use the full 6 cups) Continue kneading with your hands until dough is in a ball and is somewhat elastic. Spray a bowl with cooking spray and leave the dough ball in there for rise (covered) for about an hour. Now separate the dough into two parts (with floured hands) and knead each ball a little and then shape into a loaf and set each into a sprayed bread loaf pan. I then cover them with sprayed plastic wrap (to prevent sticking) and then cover that with a towel and put them up again for another hour to rise. Now you are ready to bake them for 20-25 minutes in a 350 oven.

This recipe really is SO easy… and while the total time is over 2 hours (almost 3), it only takes a quick minute to do each step, which is why I can fit this into my day so easily.

Two best ways (in my opinion) to eat this bread? Butter and honey (to die for) … or slice and add cheddar cheese and microwave until cheese melts – so good!!

…we attended a fall charity auction the other night, and came home with several big bags of yummy apples. In an attempt to get them used up before they go bad, I have been finding all kinds of uses for them… and by far the yummiest was the fun apple pie that I made, using a recipe that came from my son’s preschool class last year. (in other words…. pretty simple. but amazingly delish!!)

First of all, you can use a pre-made crust, or make you own. (I actually used a pre-made graham cracker crust that we had … and it worked great!)  Then wash,  peel and slice 8 apples, and place them in a large bowl and mix them up with 3/4 cup sugar, 1/4 t. sale, 1 Tablespoon flour and 1/2 t. cinnamon. Put this mixture into the pie crust.

In another bowl, mix1/3 cup softened butter (you could even go 1/2 cup), 3/4 cup flour and 1/2 cup sugar (you can cut this back a bit as well, if you want). Mix this all up (I just use my hands) and then sprinkle this mixture on top of the apple mixture that is already in the pie pan.

Bake in a 375degree oven for 45 minutes … heaven!!

I then whipped up some yummy homemade ice cream and put in on top of the still warm pie… so good!! I will tell you that this pie is a little “runny” which we thought was odd at first, but it is so good, that you won’t care. (at least no one around here ever complains, lol) Enjoy!!

….Happy Sunday everyone!! I thought of today’s share because these are the cookies that I bake the most in the fall … my hubby loves to take them on his hunting trips, and they make the house smell amazing. We call them Oatmeal Raisin Crisps, but they are really just cookies … and here’s the recipe:

2 Sticks Margarine (softened)
1/2 cup Granulated Sugar
3/4 cup packed Brown Sugar
1 Egg
1 tsp. Vanilla
1 1/2 Cup All-Purpose Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 tsp. Cinnamon
1/4 tsp. Nutmeg
3 Cups Oatmeal (you can use Quick OR Old Fashioned)
1 Cup Raisins (we prefer yellow raisins, but either will work)
*You can also add 1 cup of nuts … , but I usually don’t. I do, however, sometimes add chocolate chips …

Preheat oven to 375degrees. Beat everything together in the mixer, starting with the margarine and sugars. Then add in the egg and the vanilla. Next add the flour, baking soda, salt and spices … mix well and then stir in the oats and raisins by hand. I use an ice-cream scoop to put the cookies onto a  ungreased cookie sheet. Bake 8-9 minutes … be careful not to over bake, but you still want a little crisp (at least that’s how we like them) Cool one minute and then remove from cookie sheet to a baking rack. This makes a LOT of cookies … usually over 4 dozen.  (oh…and they freeze wonderfully!) Enjoy!!

…so, as I have mentioned recently… we just had a little princess turn 3. . . and as are all things with princesses…it had to be a royal affair. A royal affair, on a budget that is. I thought I would share with you just how we accomplished that. I LOVE to do hands-on parties for my kids, and I always hand make both the invitations and the cakes …but I have come to realize, that I can still take short cuts in making them… the most important thing…is that they are made with lots of love. Here’s how…

THE CAKE

So super easy.  I baked the cake in a round Pyrex bowl… turned it upside down and decorated it!  The total cost on the cake was $7.54… Here the breakdown on that:  97 cents Cake Mix + 97 cents Frosting + 3.99 pack of sparkly frosting paints (I splurged!) … and $1.57 for the Kelly doll that was on clearance at Target = total of $7.54

THE INVITATIONS

The invites were SO easy … and total cost on them was $3.98…thanks to Hobby Lobby (love that place!) I bought 2 packs of Princess Treasure Chest Invitations and one pack of 8 BIG diamond rings… plus used a 40% off one item coupon … for a total of $3.98. Then came home and make some cute invites on the computer, spritzed them with glitter spray…and rolled them up inside the diamond ring…(along with a note saying that attendees to the royal party would need to be wearing their ring for admission into the party, of course!) placed the  invites in the princess boxes …. and off we went to deliver …

THE PARTY

I scored some awesome party goods at the great sale from BuyCostumes that I told you about here. In fact… I got a whole lot of princess grab, gear and party favors for $23.50 shipped. I even scored a killer deal on wrapping paper from The Country Score deal that I posted about way back in February… these are huge, darling rolls and at 99cents a roll... that was a total score (plus I have enough for at least 5 more parties!) You can see this cute wrapping paper in the photo of the cake at the top of this post.

THE GIFTS

I was so proud of myself this year. Little sissy got some darling, quality items… and I got some great prices on them. She loved her Melissa & Doug Fold and Go Mini Dollhouse that I got on Amazon, and was able to pay for with Swagbucks…plus, I even had enough left over to almost pay for the Melissa and Doug Fold and Go Barn that I got to go with it ( these are STILL on sale, by the way … and they have free shipping…so I ended up having 16.18 out of pocket on these, and in case you were wondering … they are WONDERFUL… my kids have played with them for hours on end since she got them) … I also got her a darling rolling Pink Pony suitcase off of a daily sale at Zulily$16.99. Love Zulily!!

THE PRINCESS

Well, the princess was priceless (of course!) … but her attire was an adorable princess dress that I scored from a Zulily sale…for $16.99!… and she looked so adorable in it! It even said PRINCESS across the front, in case there was any question as to who was the guest of honor.

Totals:

Cake: $7.54 + Invitations $3.98 + Party Supplies/Goodies $23.50 + Gifts $33.17 + Dress $16.99 = $85.18 … and most of that total includes toys that we will get use our of for years to come!

As you might know, it is really easy for birthday party expenses to get out of hand…especially if you are scrambling to put stuff together. If you can plan ahead a bit, I think that helps a lot. I also find that I spend less money when I focus more on the things that my daughter will love, like letting her help me make the cake, and focus less on the spendy little extras that really don’t mean much in the long run.

Today’s Sunday Share is another fun QUICK and EASY breakfast recipe. This one comes from my wonderful SIL Andra. This can be served alone with toast, or it is also fun to make as part of a brunch along with other breakfast items. Most importantly, it is really simple, and yummy too!  All that you need for ingredients are: Ham, Eggs, Cheese and Salt & Pepper.

I have mentioned before that ever few months, I will purchase a marked down Ham (in the “almost expired” section of my Albertson’s) and then I bake it and we vacuum seal it into serving size portions for our family. (This comes in really handy for making soups, breakfast….and recipes like this one) So …the ham that I am using is a bit thicker, but you can also use sliced deal ham (in fact, they turn out a little cuter with the sliced deli ham because the ham wraps up a bit more.)  Anyway ~ Here’s the Recipe:

Start by lightly greasing your muffin tins (spray)  and then place a piece of ham at the bottom of each cup. (If you do have sliced ham, you can make more of a cup out of the ham. Crack an egg into each cup. Salt & Pepper and then add Cheese (I used cheddar for this recipe, but parmesan is also really good.) Place in a 350degree oven for 8 – 15 minutes … depending on how done you like your eggs. We like ours runny, so 8 is plenty. These are so yummy served with toast!…and you can get creative and jazz this up a bit with parsley, spices….and if you like tomatoes…for a fun twist …. they are super yummy with grilled tomatoes.

My Sunday Share is another Breakfast Recipe share. In fact…this is what we had this morning. I got so many comments from those of you that tried the Popovers last week…that I decided to share another of our favorite breakfast recipes. This one is really simple… but really yummy… and actually quite an impressive breakfast to make because it looks so much harder than it actually is.

These are German Pancakes. It takes about 5 minutes to mix them up, and then they cook for 20 minutes…which I like because it gives me time to get a few other things done while they cook.

Ingredients:
6 Eggs (I use 4 eggs and then the whites of 2 more … but I will be honest and tell you that 6 eggs do make them better)
1 Cup Milk
1 Cup Flour
1/2 t. salt
(This recipe makes enough for 2 adults and 2 kids …you can also cut this recipe perfectly in half … which would make enough for one person, maybe 2.)

Preheat the oven to 350F ~ blend the above in a medium bowl with whisk. You can either do one or two LARGE Germans or… do like I do and I make one large one for my hubby, and then small ones for the kids and I. Each German will need its own pan and you will melt a dab of butter (enough to coat the bottom and sides to prevent sticking…. and of course you could probably use a spray oil, but it won’t taste as good ;) ). Then pour batter into each pan just covering the bottom (more if you want them thicker) Put them in the oven and bake for 20 minutes. (Keep an eye on them…I take them out just when they start to turn golden on top.) Here is the funny (and FUN) thing about German Pancakes: they can get really huge and bubbly … or sometimes they stay really flat … it all has something to do with altitude (at least, that is what my Grammy told me ….) but, I am never quite sure how they will turn out until they are done… and my kids find this REALLY exciting…. (until they go flat …which they always do as they cool)

We love to top these with bananas, berries, honey and powdered sugar …

My Sunday Share for today is one of our favorite breakfast recipes … we call them Breakfast PopOvers. Saving money and time seems to be at the top of our list lately…so I thought I would share one of our favorite breakfasts that is a) REALLY easy b) YUMmmmy and c) actually somewhat healthy. We call these Breakfast PopOvers. I literally blend them up in the mixer and pour them into muffin tins ~ go take a quick shower ~ come back and they are done!

Ingredients:
1 cup flour
4 eggs (sometimes I remove 2 yolks)
1 cup milk
2 tablespoons melted butter
2 teaspoons vanilla
2 teaspoons sugar
Preheat the oven to 450F ~ blend the above in a blender. Spray muffin tins with oil, fill 1/2 way ~ put in oven for about 12 minutes on middle rack. We top these with home canned peaches ~ blueberries ~ applesauce, syrup, powdered sugar… whatever you like! This recipe makes 13-16 PopOvers. Happy Sunday …. and enjoy!

… I thought that I would share with you one of my favorite “old stand-by” recipes. This yummy recipe was passed down to me by my friend Kathy who is an amazing cook, and it is the appetizer that I usually choose if we are going to an event that calls for one.

Bacon Rounds you will need: 1 Long Sourdough loaf, Cheddar Cheese and Swiss Cheese (you can substitute either), 1 small can chopped olives, 1 bunch green onions, 1 Cup crumbled bacon (sometimes I cheat and buy the kind that is already cooked), Mayo, Sour Cream, Horseradish

Here’s what you do: Slice sourdough bread. Cook bacon (or cheat and buy the already cooked kind either by the lunch meats OR the Salad topper kind…just make sure it is the chewy type and not the real hard ones) Put crumbled bacon parts in large bowl and add 1 Cup cheddar cheese and 1 Cup swiss cheese. Chop 1 bunch of green onions (don’t use stems)…then add 1 small can of chopped olives. Add two Tablespoons of Mayo and 2 Tablespoons of Sour Cream …now get your hands dirty and just mush all of this together. Add horseradish to suit your tastes (we like 3-5 teaspoons) Start slow adding the Mayo and Sour cream (just make sure to add equal parts) You only need enough to hold all the ingredients together. Next, line your bread slices out on a cookie sheet and pat the mixture onto each slice. Put in a 350degree oven just until cheese starts to melt. Heaven. I love these … so every time we bring them to an event, I end up filling up on them. EVERYtime. YUM.
