Breakfast Recipe | Sourdough Cream Cheese French Toast

Here’s what we had for breakfast this morning, it’s an old favorite around here, so I thought I would re-share!
Sourdough Cream Cheese French Toast.  The best thing about this recipe, besides the fact that it is delicious,  is that it is super easy (and affordable)!

You will need:

Sourdough Bread (I buy Seattle Sourdough Round by Franz Bread)
Eggs
Milk
Vanilla
Cream Cheese
Berries/Bananas
Syrup (I used huckleberry syrup this morning)
Powdered Sugar

Directions:  First, you will want to make French Toast like you normally would (For my egg mixture,  I mix 5 eggs (I remove yolks from 3 of them, but that is up to you), a splash of milk and a teaspoon of vanilla). I used the entire bag of bread, so I actually doubled the egg mixture. We really love this recipe with the HUGE sliced Seattle Sourdough Cracked Wheat Sourdough bread (made by Franz Bread), but any bread will work.

Dip your bread, front and back in egg mixture and then place on Pam sprayed skillet.

Brown on both sides, and just before it is almost done, I spread on a layer of cream cheese and then add strawberries and bananas (this helps the cream cheese to seep into the bread, so yummy!) Top with other berries, if you like … add syrup and powdered sugar and enjoy!

Easy Peasy Guacamole | Perfect for Cinco De Mayo

If you have been reading my blog for anytime at all, then one thing that you probably know about me is that while I like yummy food and recipes, I also love for them to be simple! Here is one of our favorite simple little recipes that we probably make at least once a week. I have a few items on my list for every time that we stop at the farmer’s market, and those items include: Avocados, red onions, lemons and cilantro. And all four of these items just happen to blend together to make what has to be the world’s easiest (and yummiest!) guacamole. My hubby and I have been making this for a quite a few years, and it seems like the more simple the recipe gets, the more we like it!

To make this quick homemade guacamole,  you will need:

  • 1 large Avocado (or more, depending on how much you want to make)
  • 1 lemon (or lemon juice)
  • 1 bushel of cilantro
  • 1 red onion
  • Sea Salt

I start by mashing up the avocado, and then adding the other items as needed. Typically, per avocado (and one large one makes just enough for my family for a nice dipping snack) I will use 1/4 cup chopped red onion (to taste), 1/4 cup chopped cilantro (not a packed 1/4, but loosely filled) , the juice of 1/3 the lemon (just squeeze it once or twice over the dip a couple times), and then grind sea salt over the dip to your taste preference. Easy. Peasy!! Grab a bag of tortilla chips … and enjoy!

I do recommend making it fresh, right before you are going to eat it, as I have yet to master the art of my avocados not turning brown.

Fun Valentine’s Day Ideas…

I have to admit, while I love to celebrate almost anything, Valentine’s Day is one of the holidays that I feel gets very commercialized.

Anyway… I DO love any chance to show my family how much I love them, and for that, I will jump right on in and celebrate the LOVE of this day. I thought I would share with you a few of the ways that I usually do every year to get us in the festive spirit of this LOVEly day!

First of all … I will start off the day by making my family heart shaped (pink!) pancakes… my kids get the biggest kick out of these:

I also wanted to share with you a really neat gift that I made for my hubby a couple of years ago. My good friend Jaycie over at CouponGeek shared with me this neat idea for a photo gift. I decided to give it a try, and I LOVE how it turned out. I took a photo of my wedding band in an open page of my bible, and followed her instructions to let the light come in and create a natural heart shape just below my ring…I must say, I am SHOCKED that it work, and it turned out wonderful! It now hangs framed in our room.How to do you celebrate Valentine’s Day?

Lava Lamp Drink Recipe

If you are looking for a fun drink to spice up your New Year’s Eve festivities… look no more! Here’s a really fun drink from the folks at Ocean Spray!

Ingredients:

6 ounces Ginger Ale (for the kids) and/or champagne or sparkling wine, chilled
1 teaspoon Ocean Spray® Craisins® Dried Cranberries, any flavor

Directions:

Pour champagne into a champagne flute. Add dried cranberries. After a moment, cranberries will begin to slowly float up and down in glass, like a lava lamp. Makes 1 serving.

My kids LOVED this drink, and they loved watching it as much as they loved drinking it… so fun to watch the cranberries float around!  Happy New Year everyone!

She Bakes! | Breakfast Popovers Recipe

For breakfast this morning, I made one of our favorite breakfast recipes … we call them Breakfast Popovers. This is a yummy breakfast that combines some of our favorite things when it comes to a weekend breakfast:  a) REALLY easy b) YUMmmmy c) very affordable (great for big groups) d) actually somewhat healthy.

I literally blend them up in the mixer and pour them into muffin tins, wait 9-12 minutes (love that part, so quick!) and they are done!

Ingredients:
1 cup flour
4-6 eggs (The more eggs, the denser the popover, and sometimes I remove a couple yolks)
1 cup milk
2 tablespoons melted butter
2 teaspoons vanilla
2 Tablespoons sugar

Preheat the oven to 450F ~ blend the above in a blender. Spray muffin tins with Pam, fill 1/2 way with mix~ put in oven for about 9 to 12 minutes on middle rack (watch them close, they can start to darken quickly past 9 min). We top these with home canned peaches ~ blueberries ~ applesauce, syrup, powdered sugar… whatever you like!  Today we used bananas and fresh picked raspberries (so good!)  This recipe makes 16-20 Popovers.

We love to play with food around here, and while I am no gourmet cook, I have a blast baking with my kids and coming up with creative and festive ideas!

This morning we made pumpkin pancakes, here’s how:

We added food coloring to our Bisquick pancake mix (Note: we didn’t have orange, so we went with yellow instead)
Then when there was just a little pancake mix left, I added green food coloring for the stems, and used a spoon to drop “leaves” on the skillet.
We cut a piece o f toast into small rectangles to use as stems, and of course, chocolate chips (FREE ones from my post here) for eyes and mouth.I love celebrating the seasons with fun little food activities like this, and it made for a really fun family breakfast together!

Recipe Share | World Harbor Marinated Cod

I have so enjoyed experimenting with the World Harbor products, there are so many yummy ways to use them! My mom is a really good cook, and she has been helping me to come up with creative ways to use these wonderful sauces. Here is her latest creation using the World Harbors Lemon Pepper and Garlic Marinade and Cod:

We decided to prepare cod with the World Harbors Lemon Pepper and Garlic marinade–yummy–and easy!!  I marinaded the fish for about two hours, put it in a single layer in a disposable aluminum pan, sprinkled it with plain bread crumbs and a little grated parmesan cheese, and baked it at 400 degrees for approximately 12 to 13 minutes.  I served it with rosemary rice and a small salad for a totally balanced meal.  Next time I would like to try a little “heartier” fish like salmon or red snapper to allow the marinate to complement the fish’s own flavors.  Cod tends to be a little bland.  All in all, once again very pleased with the World Harbors product!

I’m baking up one of our favorites today
…we call it: Easy Bread. It’s called Easy Bread for a reason… it’s SO simple. (and let me tell you … Easy Bread makes one mean grilled cheese sandwich!)

Here is what you will need to make Easy Bread:

3 Cups Warm Water (almost hot)

1 package Yeast (or 2 1/2  tsps)

1/2 tsp salt

1/3 cup sugar

5-6 cups flour (I have used many kinds of flour with this bread, so experiment and see what you like best)

First of all, combine your water, yeast, sugar and salt and let them sit for 5 minutes. Slowly start adding in your flour, and by the 4th or 5th cup of flour, I am usually using my hands. Add in flour as you need it (I usually use the full 6 cups) Continue kneading with your hands until dough is in a ball and is somewhat elastic. Spray a bowl with cooking spray and leave the dough ball in there for rise (covered) for about an hour. Now separate the dough into two parts (with floured hands) and knead each ball a little and then shape into a loaf and set each into a sprayed bread loaf pan. I then cover them with sprayed plastic wrap (to prevent sticking) and then cover that with a towel and put them up again for another hour to rise. Now you are ready to bake them for 20-25 minutes in a 350 oven.

This recipe really is SO easy… and while the total time is over 2 hours (almost 3), it only takes a quick minute to do each step, which is why I can fit this into my day so easily.

Two best ways (in my opinion) to eat this bread? Butter and honey (to die for) … or slice and add cheddar cheese and microwave until cheese melts – so good!!

This is a post that I have shared several times, as it is tradition this time of year for us. I hope you enjoy!
My kids (and hubby and I too, actually) got hooked on grapes a few summers ago. Grandpa has TONS of them along his back fence. Grandpa had the brilliant idea to freeze them. We call them Grapecycles. (I actually think I saw Martha Stewart freezing grapes to use as decor in punch bowls as ice cubes…) So we gave it a try…and it has become a favorite treat in our home…all year round! The best part about this snack is that it is super easy (not to mention healthy!) You just start with grapes right off the vine. Picking them is the fun part…..

I actually have a girlfriend who lives in another state who went and bought grapes just so her kids could enjoy them year round like we do, (they came for a visit and LOVED them) so if you don’t have access to a grape vine then you could just purchase them at the grocery store if you find them on sale.

(If you don’t have access to grape vines, there have also been some GREAT sales on grapes lately…and/or checkproduce stands, farmers markets … I have even seen BAGS of them at garage sales… so check around…if people have vines, then they might have more grapes then they know what to do with!)

I wash them really well and then strain them to dry. I purchased (on clearance last year!) those plastic freezer containers that are right next to the canning supplies in the grocery store.

They stay delicious all year. We ran out of frozen grapes in June this year, so we are doing some extra stocking up this year!

Inexpensive, EASY and healthy…not to mention delicious…!!

*very important note: we eat them frozen … before they thaw…they get gushy when thawed!!

I have so enjoyed experimenting with the World Harbor products, there are so many yummy ways to use them! My mom is a really good cook, and she has been helping me to come up with creative ways to use these wonderful sauces!

We found a great buy on chicken thighs and decided to add the teriyaki touch by using World Harbors® Maui Mountain Teriyaki.   We trimmed off the excess fat on the skin, put the chicken in a plastic bag and poured about one-half cup of the World Harbors teriyaki marinade over the chicken, turning the bag to coat.  We refrigerated it for about an hour and a half, sprinkled it with a little salt, pepper, and garlic powder, then put it on the barbecue on low heat and turned it often to prevent burning. 

The pineapple flavor of the sauce is awesome, and the chicken stayed moist with or without the skin.  So easy, and the finished product was delicious:
