… I thought that I would share with you one of my favorite “old stand-by” recipes. This yummy recipe was passed down to me by my friend Kathy who is an amazing cook, and it is the appetizer that I usually choose if we are going to an event that calls for one.
Bacon Rounds you will need: 1 Long Sourdough loaf, Cheddar Cheese and Swiss Cheese (you can substitute either), 1 small can chopped olives, 1 bunch green onions, 1 Cup crumbled bacon (sometimes I cheat and buy the kind that is already cooked), Mayo, Sour Cream, Hors
eradish
Here’s what you do: Slice sourdough bread. Cook bacon (or cheat and buy the already cooked kind either by the lunch meats OR the Salad topper kind…just make sure it is the chewy type and not the real hard ones) Put crumbled bacon parts in large bowl and add 1 Cup cheddar cheese and 1 Cup swiss cheese. Chop 1 bunch of green onions (don’t use stems)…then add 1 small can of chopped olives. Add two Tablespoons of Mayo and 2 Tablespoons of Sour Cream …now get your hands dirty and just mush all of this together. Add horseradish to suit your tastes (we like 3-5 teaspoons) Start slow adding the Mayo and Sour cream (just make sure to add equal parts) You only need enough to hold all the ingredients together. Next, line your bread slices out on a cookie sheet and pat the mixture onto each slice. Put in a 350degree oven just until cheese starts to melt. Heaven. I love these … so every time we bring them to an event, I end up filling up on them. EVERYtime. YUM.

…. I made an amazing discovery last night. Normally, our day runs pretty smoothly until it is time for me to make dinner…and then things seem to fall apart. The kids are hungry, they are anxious for daddy to get home, I am frazzled… “out of the kitchen!“, I holler! … but last night, I tried something different. We made dinner TOGETHER! …. the menu was homemade pizza … and we had a ball! I made one large pizza, and gave them each their own dough ball to make their own…
.. and we kept things REALLY simple.
For Starters … pizza sauce ….
…lots and lots of 
pizza sauce…then comes the cheese, ya gotta have cheese! (just ask little sissy …her pizza was all about the cheese) Next comes the ham. I have started doing something new the 
past few months because I have been finding hams marked down at our local Albertsons (due to close exp. dates) I paid only $7 and change for the last one! … so I bring them home, bake them, and then my hubby seals them into individual freezer packets so that we can take them out as we need them. This works great for breakfast because it is just the perfect size for Ham & Eggs for our family. (and it gives us a LOT of ham that lasts quite a while) And it is also perfect for when we make …. Pizza!
So…add the Ham and then next comes the pineapple…and we are ready for the oven…. 20 minutes later (we do a really thin crust, so it doesn’t take long) …. and we have finished pizzas ….
Yum!! …oh! And here is a little secret. Normally, I make my own dough (or use the bread maker to make it) …but for this project…I brought in a little helper, just to keep things simple … at 49cents a box… this stuff comes in really handy for fun projects like this!
…and the end result…success!! (plus…they had made their own dinners!!)
It was fun, relaxing…and yummy!!
