Easy Lemon Bars Recipe

This delicious Lemon Bars Recipe if one of my very favorites for a quick and delicious dessert that the entire family will love. This is one of our favorite desserts! It also happens to be one of the easiest desserts. Affordable to make, they resemble classic lemon bars without all the work.

They are so easy, in fact, that these homemade lemon bars are the first recipe that my son ever made on his own. It’s such an easy dessert and a great recipe for beginners!

We especially enjoy them in the spring and summer because lemon is always so refreshing and enjoyable in the warmer months!

Ingredients for Making Lemon Bar Crust

  • Butter, softened
  • All Purpose Flour
  • Sugar

Ingredients for making Lemon Layer

  • Eggs
  • Sugar
  • Flour
  • Lemon Juice (fresh lemon juice if you have it!)
  • Baking Powder
  • Topping: Powdered Sugar

How to Make Easy Lemon Bars

1. In a large bowl, mix together the crust mixture to form a crumbly dough.

2. Press into the bottom of a greased 8×8 baking dish or glass pan. Bake the crust at 350 degrees for 15 minutes in a preheated oven until the top of the crust a little golden brown.

3. In another large bowl, mix the eggs, sugar, flour and lemon juice until well combined.

4. Add in the baking powder last and whisk together until no lumps remain.

5. Pour the lemon mixture over the baked crust and place the baking pan in the oven at 350 degrees for an additional 15-20 minutes or until the lemon layer is set and no longer jiggles.

6. Cool for several hours before cutting and serving. Sprinkle cooled bars with confectioners’ sugar before serving.

Tips for Making Lemon Bars

Pro tip: You might have better luck getting clean slices when cutting your lemon squares if you store them in the fridge for a bit before cutting. I would definitely let them cool to room temp before placing them in the fridge, and the once cold – use a sharp knife to slice into squares. The lemon curd filling can be tricky to cut and this might make it easier for you.

You’ll want to store lemon bars in an airtight container or cover them with aluminum foil or plastic wrap. I believe you can keep them at room temperature, however we like to keep them in the fridge.

This really is a favorite recipe around here and one that I often make in a pinch. Because they are so easy and affordable to make, these luscious lemon bars are also perfect to make during the holiday season. They also make a fantastic cookie recipe for bake sales. Such a wonderful sweet treat that everyone loves, and they have the best flavor!

I’m a huge fan of copycat recipes, and this recipe turns out so much like Pioneer Woman’s Lemon Bar recipe – I finally had to make them to try and see but guess what? I think I like mine even better!
